Bistronomic Restaurants in Paris: Our Best Addresses for an Explosion of Flavors

A combination of bistro and gastronomy, the bistronomic restaurant is a concept born in the 90s that combines low prices and creative, refined cuisine, made with fresh and seasonal products, and often orchestrated by great chefs. Specific to French culture, there is tasty and artistic cuisine, quality service and a place without fuss. For several years, they have not stopped conquering Paris; We therefore present to you our little favorites to test as soon as possible!

Gabylou

Nestled in the heart of the 17th, Gabylou has quickly become the most popular bistro in the area. As soon as you walk through the door, you discover warm and modern decoration with a bistro-flea market spirit. Exiting the traditional cuisine, they deconstruct and revisit. They then reveal the duck breast accompanied by mashed celeriac, roasted figs and raspberry sauce, ravioli with prawns, shellfish sauce and slivers of hazelnuts with ginger and yuzu or a trout gravlax, wasabi cream, mango and crispy crumbled with squid ink. End on a high note with the passion-lemon cream mille-feuille and we accompany it all with an organic and natural wine. Enough to fully satisfy your taste desires!

Aléa

Notice to real foodies: here is a new nugget in the 18th arrondissement where you will surely impress the taste buds of your loved ones. Aléa is the promise of a cuisine that is both ultra-gourmet and refined, with a Chef (Léa) at the helm, whose mission is to gently capsize your senses. In this intimate restaurant with a refined but warm decor, filtered candlelight, each bite of unique flavors is a pure dream… which comes true. We must give a special mention to the Comté cheese pie with Morteau sausage and meat juice, or the cauliflower velouté, or the chocolate tart with mousse whipped with orange cream… pure delight. The menu changes every week, so you never get tired of it.

Shiro

It’s the wondrous taste and surprise of the summer! Shiro, the new Japanese restaurant in the neighborhood, is already being emulated by gourmets looking for a change of scenery. In a zen and refined atmosphere, you can taste high-end dishes imagined by Chef Hiroyuki Ushiro. A delicate and creative cuisine combining French gastronomy with Japanese influences. The most difficult thing that afternoon will be to make a choice. A la carte, the signature bento with 9 small bistronomic creations will be the Messiah of the undecided. Prepared to order, the tray with 9 gourmet compartments is succulent and absolutely delightful. This is what we call Umami, a perfect harmony of flavors that bring a great dose of happiness to the taste buds.

Tamara

Real favorites are rare, however, Tamara is one of those addresses from which you come out completely turned upside down. Nestled a stone’s throw from the Louvre in the 1st, this “gastro-logical” restaurant is masterfully managed by five enthusiasts. A small address for great gourmands, where the cuisine is refined, ethical and really makes you want to dip your fork into it. On the menu, there are dishes with complex flavors expertly prepared by chef Clément Vergeat. We then set our sights on raw fermented zucchini accompanied by asparagus, currants and plum water, roast turbot with hazelnut butter and eggplant caviar or even fresh strawberries with a white chocolate ganache, fennel and rhubarb pickles. An absolute massacre. Between two tasting trips, sip a natural wine sourced with love and kept in the cellar in the basement, a house cocktail or a shot of kombucha concocted by Olivier, Clément’s second in command. The tastes are incredibly fair, the decoration raw and refined like the menu and all the ingredients are used from head to toe! To top it off, the welcome is delicious.

TÔ

If the cuisine of TÔ restaurant has a pronounced taste for Japanese flavors, it is above all because its team is exclusively from this beautiful country, and even the boss speaks the language with his team. Chef Ryo Miyazaki, a regular at starred restaurants, adds to the French know-how acquired after many years of experience a subtle and creative touch that he draws straight from his origins. We then find on the menu – which changes regularly – dishes as gourmet as they are gourmet such as a hanger steak with shiso chimichurri sauce, a marinated salmon carpaccio with wasabi sauce or a salmon marinated in miso and its yuzu date puree; all that and more for reasonable prices.

La Régalade du Faubourg

We were wondering if it was still possible to find a hidden garden in the capital, and here we came across this green setting one winter evening. Not only is the place superb and exotic, but you can also enjoy a unique culinary moment! Indeed, the excellent chef Bruno Doucet, who has been delighting us for several years with his two Parisian addresses, has set down his kitchen tools in the new and very beautiful hotel Les Jardins du Faubourg. Located a stone’s throw from rue Saint-Honoré, this new bistronomic address totally charmed us. We sit comfortably on the bucolic heated terrace where a large Medlar tree sits, and we let ourselves be transported by the seasonal menu offered; we obviously fall for the fabulous risotto with squid ink, grilled prawns, crispy ham, garlic and parsley, for the filet of sole meunière and its endive braised with citron zest as well as for the delicious ravioli with artichokes and chanterelle mushrooms. How not to finish on his mythical rice pudding recipe, created by his grandmother, which is sprinkled with an addictive coulis of salted butter caramel. A place where it is good to cut ties with the Parisian tumult to treat yourself to a timeless tasty moment.

L’Escudella

L’Escudella is the baby of the former chef at Le Meurice and 2012 Top Chef semi-finalist, Paul-Arthur Berlan. This bistronomic restaurant opened its doors in 2015 in the heart of the 7th district and has since offered cuisine with southern accents, inventive and tasty, only based on seasonal products and from short-circuit farmers. L’Escudella means “plate” in Occitan, the chef being from the city of Carcassonne. Every month, there is a new 5-course menu consisting of amuse-bouche, two starters, two dishes including meat and fish such as hare à la royale or roast monkfish with soubressada, two desserts and sweets to end on a high note. Lots of little surprises complete this dinner. Let’s not forget the signature dessert, the Paris-Carcassonne which is a Paris-Brest revisited with a praline coulis and a lighter cream. The chef’s suggestions change regularly and we discover a new dish of the day à la carte as well as a menu of the day in addition to the 5-course menu. In the middle of the magnificent collection of artisanal plates presented on the wall, we like to share a business lunch or a festive dinner at L’Escudella and discover the tastes of the seasons, combined with powerful and contrasting Occitan flavors.

Dassai

Joël Robuchon and the famous brand of saké Dassaï have said yes to 184 rue du Faubourg Saint-Honoré. They offer to go “to the other side” of the counter, closer to the know-how and taste of Japan. We then embark on a journey to the land of the Rising Sun, to discover the world of Dassaï and its perfect chords. Accessible by a round staircase worthy of a Tim Burton film, the pairings between sake and good food are pushed to harmony. We enjoy a bistronomic Franco-Japanese cuisine based on sake, at affordable prices, from 49 – 89€ for the tasting menus depending on the number of starters and dishes chosen. The healthy and fragrant cuisine would bewitch any lover of Asian influences. We love the melting eggplant with crunchy vegetables and sumac, the scallops cooked in the shell with seaweed butter, the black cod marinated in white miso, or the poultry in green curry with Japanese rice,  chef Fabien Francois’s favorite. The menu changes with the seasons and only offers high quality fresh products. A good reason to return regularly!

Brasserie Lazare

Located on the footstep of Saint-Lazare station, Éric Frechon decided to surprise his guests. Near the famous footbridge, classified as a historic monument, the location may surprise you, but it is nevertheless good to meet at any time of the day in this place full of life, where the excitement is perpetual. And this is not a trivial choice for the starred chef, because settling in Saint-Lazare station means targeting the west of Paris but also his native Normandy. When you push open the door of this modern brasserie, you are directly immersed in a comfortable and warm setting punctuated by a play of warm materials. Good cuisine is democratized but also authentic, familial and generous, inspired by French tradition. Both in terms of quantities and the excellence of the products, we like to indulge ourselves and taste traditional and refined dishes such as pork belly accompanied by its mustard puree, or daring creations such as Paris-Deauville, the signature dessert. A real return to the most pleasant sources!

Instinct

Well hidden in the small rue de Picardie is an address with a discreet but pretty storefront. Opened by four very inspired friends, we decided to follow our instincts and venture there. We get into the mood by tasting a cocktail with calvados, lime, honey, rhubarb bitters and ginger beer, which we associate with a series of small dishes to nibble, such as rabbit terrine or radishes and smoked salted butter. The menu, designed by Maximilian and Camille, showcases simple, gourmet, 100% homemade and based only on seasonal products. Despite a reduced and eclectic menu, the choice seemed impossible to us that evening. We loved the cucumber gazpacho with fresh goat cheese, mint and almonds, as well as the perfect egg, its asparagus vinaigrette and its parmesan crumble. The presentation is pretty, neat and everything makes you want to devour it. In terms of dishes, the matured French entrecôte is definitely the dish not to be missed! For fish aficionados, know that it is supplied by Terroir d’Avenir, whose products come from sustainable fishing. There is also a series of vegan and gluten-free dishes, such as the revered black rice: coulis of piquillos, sautéed broccoli and roasted sesame. And because, for us, a dinner always ends on a sweet note, we accompanied our profiteroles with a cognac infused with fresh pineapple, pepper, vanilla and coffee.
